From the Field to the Bowl: Why Chef Nate Went Straight to the Source

 

When people think about restaurant innovation, they usually picture chefs creating new recipes or testing menu items in a kitchen. What they probably don’t picture is a chef standing in the middle of a cabbage field. But that’s exactly where Teriyaki Madness Culinary Director Chef Nate Weir recently found himself.

Cabbage may not be the first ingredient people associate with Teriyaki Madness, but it’s one of the most important. It appears in nearly every bowl we serve, making it one of the most-used ingredients across our franchise system. Because of that, Chef Nate wanted to see the process firsthand. He wanted to understand how cabbage is grown and harvested, as well as how it’s washed, processed, and prepared before it eventually makes its way to our kitchens.

This trip was an opportunity for Chef Nate and the entire TMAD team to get a deeper understanding of an ingredient that gets served to customers around the country every day. In the process, it offered a close look at something many franchisors neglect: everything that happens long before a meal reaches the customer.

 

Healthy Food Starts with Healthy Ingredients

At Teriyaki Madness, we’ve always believed that great food starts with high quality ingredients. While customers come to us for bold flavors and huge bowls of awesomeness, fresh vegetables remain a cornerstone of the menu. Ingredients like cabbage don’t just add texture and flavor. Watching an operation in person gives us a better understanding of how products travel through the supply chain. It helps our team learn about growing conditions, seasonal challenges, quality control practices, and lets us ask questions directly to the people who produce the ingredients. This knowledge is important for a restaurant brand.

We usually only hear about supply chains when something goes wrong, like a shortage, a late delivery, or rising prices. But a lot of important work happens long before any problems come up. It’s about building relationships, understanding how things work, and staying in touch with the people who grow the ingredients we use every day. Chef Nate’s visit was a great opportunity for that. By spending time at the source, our team gets a clearer picture of the journey ingredients take before they get to our restaurants. This understanding helps us make better decisions and strengthens our relationships throughout the supply chain.

One of the most interesting takeaways from the visit is how much effort goes into a single ingredient before it reaches a bowl. Customers usually see the end result: fresh cabbage served with rice, vegetables, proteins, and sauce. What they don’t see are the months of growing, the harvesting, the washing, the inspections, and the logistics needed to get that product across the country.

The modern food supply chain is incredibly complex. Every ingredient goes through many hands before it gets to a restaurant kitchen. Farmers, processors, distributors, transporters, and restaurant teams all have a part to play. When everything runs smoothly, customers hardly think about it at all. They just enjoy a great meal. Visits like Chef Nate’s help bring attention to this process and show the many people involved in consistently delivering fresh ingredients on a large scale.
